Our Story
Brian Malarkey is one of the country’s most successful and sought-after restaurateurs. Throughout his career, he has developed over 15 wildly successful restaurant concepts. With his longtime business partner, Christopher Puffer, he founded Puffer Malarkey Collective. The duo have opened ten diverse restaurants over the last five years, including the internationally acclaimed Herb & Wood, as well as his luxurious steakhouse restaurant‒ ANIMAE.

What makes our Wagyu special?
Japanese Wagyu is the finest of all steaks. Ranchers breed these special cows, tracing their bloodlines back generations to ensure every cut achieves that same, melt-in-your-mouth level of marbling the beef is known for. We sear our steaks over a Robata coal-fired grill. Our chefs cook each steak to order, triple-searing each piece of meat, first with salt, then with sake, and finally, with a barrel-aged soy sauce. It means we’ve done our homework. It means you’ve just arrived at steak heaven.
